Ingredients
  

Main Ingredients
  • 2 oz coconut milk Use full-fat for richness or light if preferred.
  • 1 oz lime juice Fresh lime juice is recommended.
  • 8 leaves fresh mint Muddle to release flavors.
  • 1 tbsp sugar or honey Optional sweetener.
  • 4 oz club soda To taste, or substitute with ginger ale.
  • 2 oz white rum Optional, may omit for a mocktail.

Method
 

Preparation
  1. Muddle the mint leaves in the bottom of a glass.
  2. Add the coconut milk and lime juice, mixing well.
  3. If using, add sugar or honey and stir until dissolved.
  4. Fill the glass with ice, then top with club soda.
  5. If using, add rum and stir gently to combine.
  6. Garnish with a lime wheel or mint sprig as desired.

Notes

Feel free to add frozen berries, cucumber slices, or fresh pineapple chunks for variations. This recipe is forgiving; adjust to taste!
