Ingredients

  • 4 fillets white fish fillets (cod, tilapia, catfish) Thin fillets work best.
  • 2 large eggs Beaten
For the Coating
  • 1 cup panko breadcrumbs Provides extra crunch.
  • 1/2 cup cornmeal For a southern flavor.
  • 1 teaspoon paprika For seasoning.
  • 1 teaspoon garlic powder For flavor.
  • 1 teaspoon salt
For Serving
  • 1 lemon sliced For squeezing on the fish.
  • 1 cup coleslaw Optional side.
  • 1 cup sweet potato fries Optional side.
  • 1/2 cup tartar sauce For dipping.

Method
 

Preparation
  1. Set your air fryer to preheat at 400 degrees F.
  2. Prepare your fish fillets by making sure they are completely thawed and pat them dry.
Breading
  1. Dunk each fillet in the beaten eggs to ensure the coating sticks.
  2. Mix together the panko, cornmeal, paprika, garlic powder, and salt in a bowl.
  3. Coat the fillets in the breadcrumb mixture, pressing it onto the surface to ensure a solid coating.
Cooking
  1. Place the coated fillets in the air fryer basket in a single layer, making sure not to overlap.
  2. Cook for 7 to 10 minutes, flipping halfway through, until golden brown and flaky.
Serving
  1. Serve the crispy fish with lemon slices, coleslaw, sweet potato fries, and tartar sauce on the side.

Notes

Ensure your fish is dry before breading for maximum crispiness. Don't skip the spritz of oil for browning and don't overcrowd the air fryer basket.
