Ingredients
  

For the Meat Layer
  • 1 lb ground beef Can substitute with ground turkey or lentils.
  • 1 cup chopped onions For flavor.
  • 2 cloves garlic, minced For flavor.
  • 1 cup mixed vegetables (peas, corn, carrots) Use frozen vegetables or fresh.
  • 1 cup beef broth For moisture.
  • 1 tbsp flour To thicken the sauce.
  • to taste salt and pepper For seasoning.
  • 1 tsp thyme or rosemary Optional for enhanced flavor.
For the Mashed Potato Topping
  • 2 lb potatoes, peeled and chopped For the topping.
  • 2 tbsp butter For flavor in mashed potatoes.
  • 1/2 cup milk To achieve desired consistency.
Optional
  • 1 cup shredded cheddar cheese For topping.

Method
 

Cooking the Meat Layer
  1. Brown the ground beef in a large skillet and drain off excess fat.
  2. Add chopped onions and minced garlic, and sauté until softened.
  3. Stir in mixed vegetables, season with salt, pepper, thyme or rosemary, and add beef broth.
  4. Sprinkle flour into the mixture, stir, and let it simmer for a few minutes.
Preparing the Mashed Potatoes
  1. Boil the peeled and chopped potatoes until tender.
  2. Drain and mash the potatoes; mix in butter and milk until creamy.
Assembling and Baking
  1. Spread the meat mixture into a baking dish.
  2. Top with mashed potatoes, creating a textured surface with a fork.
  3. Optional: sprinkle cheese over the top.
  4. Bake in a preheated oven at 400°F (200°C) for 25-30 minutes until golden and bubbly.

Notes

You can prepare Shepherd's Pie ahead of time and store it in the fridge or freeze it for later. Let it sit for 10 minutes after baking to cool before serving.
