Preparation
- In a bowl, whisk together the dry ingredients: flour, baking powder, and sugar.
- In another bowl, mix the wet ingredients: milk, egg, melted butter, and vinegar or lemon juice.
- Pour the wet ingredients into the dry ingredients and mix gently. It’s okay if the batter is lumpy.
- Let the batter rest for 5-10 minutes to let it puff up.
Cooking
- Heat a skillet over medium heat. Lightly grease it with butter or oil.
- Pour batter onto the skillet (about 1/4 cup per pancake) and cook until bubbles form on the surface.
- Flip the pancakes and cook until golden brown on the other side.
Serving
- Serve warm with butter and syrup or your choice of toppings.
Notes
For best results, avoid overmixing. You can prepare the dry and wet ingredients separately the night before and combine them in the morning for a quicker breakfast.
