  • 3 cans canned beans (black, pinto, kidney) Drained but not rinsed
  • 1 cup cooked chopped bacon Or turkey bacon
  • 0.5 cup diced onion Finely diced
  • 0.5 cup barbecue sauce Can substitute with ketchup and spices in a pinch
  • 2 tablespoons brown sugar For sweetness
  • 1 tablespoon yellow mustard Adds tang
  • to taste dash black pepper For seasoning
  • optional shredded cheddar cheese For topping
  • 1 large green bell pepper Diced, optional for added flavor
  • to taste pinch salt For enhancing flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the canned beans, cooked chopped bacon, diced onion, and diced green pepper.
  3. Add the barbecue sauce, brown sugar, yellow mustard, and black pepper. Stir well.
  4. Taste the mixture and add salt or more sweetness if necessary.
  5. Pour the mixture into a lightly greased 9x13 inch baking pan.
  6. If desired, sprinkle shredded cheddar cheese on top.
Cooking
  1. Bake uncovered for about 45 minutes, or until the edges are bubbling.
  2. For a crispy topping, check the casserole halfway through and ensure it doesn’t get too brown.
  3. Let the casserole cool for 10 minutes before serving to allow flavors to meld.

Notes

This recipe is versatile; you can make it vegetarian by omitting bacon, and it's freezer-friendly. Feel free to personalize it by adding spices or jalapeños for heat. Leftovers can be used in sandwiches!
