  • 2 cups grated zucchini Squeeze out excess liquid before adding
  • 2 pieces eggs
  • 1 cup sugar (white, optionally mixed with brown sugar)
  • 1/2 cup oil (vegetable or melted coconut)
  • 2 cups flour (all-purpose)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1.5 teaspoons cinnamon
  • 1/2 cup chopped walnuts or chocolate chips Optional

Preparation
  1. Preheat your oven to 350°F and grease a loaf pan.
  2. In a big bowl, mix eggs, sugar, and oil with a fork.
  3. Stir in the grated zucchini.
  4. In another bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
  5. Slowly add the dry ingredients to the wet ingredients, mixing just enough to combine without over-stirring.
  6. Fold in nuts or chocolate chips if desired.
  7. Pour the mixture into the greased loaf pan.
  8. Bake for 50-60 minutes until a toothpick comes out clean.
  9. Allow to cool before slicing for best results.

Notes

For best results, squeeze out the zucchini to avoid a gluey texture. Store leftovers in foil or a sealed container to keep moist.
